Pancakes are hands down one of my favorite meals. Ever. Period. Nuff said.
The are a regular occurrence in my house and guess what…they are healthy!

Look…I know typically healthy pancakes = bleh but you have to trust me on this one. These will rock your world.
Plus, they are gluten free so if that’s an issue for you, rock on sister.

1/2 c gluten free uncooked rolled oats
2 egg whites
1/4 c skim cottage cheese
1/2 mashed banana
Couple dashes of cinnamon
Add all ingredients into the blender and blend on high until the mixture is creamy. Spoon out onto pan and cook on medium heat until cooked through. Be patient.
Add desired amount frozen berries into a sauce pan and heat on med until nice and warm
Mix in plain greek yogurt until you get a thick consistency
1/2 tsp raw honey for added sweetness (optional)
